Ingredients
- 16 ounce (454 g) s orzo, cooked and drained
- 2 (14.5 ounce (411 g) s) cans diced tomatoes, drained
- 12 ounce (340 g) s crumbled feta cheese, divided
- 4-5 ounce (128 g) s spinach
- 1 teaspoon (5 ml) dried oregano
- 1 tablespoon (15 ml) lemon juice
- 1/2 cup (120 ml) chicken broth
- 3 tablespoon (45 ml) s olive oil
- 1-pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 3 teaspoon (15 ml) s Greek seasoning (see notes for homemade option)
- 1 zest from 1 lemon, about 1 tablespoon (15 ml)
Instructions
- Preheat your oven to 350°F and apply a light layer of cooking oil spray to a large baking dish.
- Combine the cooked orzo, drained tomatoes, 6 oz of feta, spinach, oregano, and lemon juice in the dish and mix well. Pour the chicken broth over this mixture.
- In a separate bowl, toss the chicken pieces with Greek seasoning and olive oil, making sure they are well-coated.
- Arrange the seasoned chicken on top of the orzo mixture without stirring. Cover the dish and bake it for an hour.
- Remove the cover, sprinkle the lemon zest and the remaining 6 oz of feta over the top, and continue baking for an extra 5 minutes until the chicken is fully cooked and the cheese is slightly browned.
- For garnish, add fresh herbs of your choice, like chopped parsley, basil, oregano, or dill.
