Ingredients

  • 16 ounce (454 g) s orzo, cooked and drained
  • 2 (14.5 ounce (411 g) s) cans diced tomatoes, drained
  • 12 ounce (340 g) s crumbled feta cheese, divided
  • 4-5 ounce (128 g) s spinach
  • 1 teaspoon (5 ml) dried oregano
  • 1 tablespoon (15 ml) lemon juice
  • 1/2 cup (120 ml) chicken broth
  • 3 tablespoon (45 ml) s olive oil
  • 1-pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 3 teaspoon (15 ml) s Greek seasoning (see notes for homemade option)
  • 1 zest from 1 lemon, about 1 tablespoon (15 ml)


Instructions

  1. Preheat your oven to 350°F and apply a light layer of cooking oil spray to a large baking dish.
  2. Combine the cooked orzo, drained tomatoes, 6 oz of feta, spinach, oregano, and lemon juice in the dish and mix well. Pour the chicken broth over this mixture.
  3. In a separate bowl, toss the chicken pieces with Greek seasoning and olive oil, making sure they are well-coated.
  4. Arrange the seasoned chicken on top of the orzo mixture without stirring. Cover the dish and bake it for an hour.
  5. Remove the cover, sprinkle the lemon zest and the remaining 6 oz of feta over the top, and continue baking for an extra 5 minutes until the chicken is fully cooked and the cheese is slightly browned.
  6. For garnish, add fresh herbs of your choice, like chopped parsley, basil, oregano, or dill.
