A flavorful Greek dish featuring tender chicken thighs marinated in a zesty lemon and herb mixture.
Ingredients
- 4 chicken thighs
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Coat the chicken thighs in the marinade and let sit for at least 30 minutes.
- Place the marinated chicken thighs in a baking dish and pour any remaining marinade over them.
- Bake for 35-40 minutes or until the chicken is cooked through and golden brown.
- Garnish with fresh parsley before serving.
Notes
For a stronger lemon flavor, increase the lemon juice slightly. If the chicken isn’t browning as expected, briefly broil at the end of cooking.
