Ingredients
- 1 lb chicken breast
- 6 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a little olive oil in a large pot over medium heat and sauté the onion, garlic, carrots, and celery until softened.
- Add the chicken breast and pour in the chicken broth. Bring to a boil, then reduce to a simmer. Cook until the chicken is fully cooked, about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in lemon juice, lemon zest, oregano, salt, and pepper.
- Simmer for an additional 5 minutes, then serve hot, garnished with fresh parsley.
