Ingredients

  • 1 lb chicken breast
  • 6 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat a little olive oil in a large pot over medium heat and sauté the onion, garlic, carrots, and celery until softened.
  2. Add the chicken breast and pour in the chicken broth. Bring to a boil, then reduce to a simmer. Cook until the chicken is fully cooked, about 20 minutes.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Stir in lemon juice, lemon zest, oregano, salt, and pepper.
  5. Simmer for an additional 5 minutes, then serve hot, garnished with fresh parsley.
