Description

Flavorful Greek marinated chicken kabobs featuring juicy chicken and colorful vegetables, perfect for summer grilling or quick weeknight dinners.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Skewers (wooden or metal)
  • Vegetables for skewering (bell peppers, onions, zucchini, etc.)


Instructions

  1. Mix together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade and stir to coat. Cover and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken and vegetables onto the skewers.
