Flavorful Greek marinated chicken kabobs featuring juicy chicken and colorful vegetables, perfect for summer grilling or quick weeknight dinners.
Ingredients
- 1 lb chicken breast, cut into cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Skewers (wooden or metal)
- Vegetables for skewering (bell peppers, onions, zucchini, etc.)
Instructions
- Mix together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper to create the marinade.
- Add the chicken cubes to the marinade and stir to coat. Cover and refrigerate for at least 30 minutes or up to overnight.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and vegetables onto the skewers.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
