Description

A versatile method for transforming chicken breasts into tender, flavorful bites using a Greek yogurt marinade, perfect for quick weeknight dinners.

Ingredients

  • 1 pound chicken breast
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh herbs (such as rosemary, thyme, or oregano) or 1 teaspoon dried herbs
  • Optional: 1 tablespoon chili powder (for spicy variation) or zest of 1 lemon (for lemon garlic variation)

Instructions

  1. In a bowl, combine Greek yogurt, olive oil, lemon juice, garlic, salt, pepper, and any desired herbs or spices.
  2. Add chicken breast to the marinade, ensuring it is well-coated.
  3. Cover and refrigerate for at least 30 minutes or up to overnight for better flavor.
  4. Preheat grill or oven to medium-high heat.
  5. Remove chicken from marinade and discard the marinade.
  6. Grill or roast chicken for about 6-7 minutes per side, or until fully cooked.
  7. Let rest for a few minutes before slicing and serving.

Notes

For best flavor, marinate overnight. Pair with fresh herbs and a citrus vinaigrette for added brightness.
