Flavorful green chicken enchiladas that are easy to prepare and perfect for any occasion.
Ingredients
- 2 cups cooked, shredded chicken
- 8 small flour or corn tortillas
- 2 cups green salsa
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup sour cream
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the shredded chicken, cumin, garlic powder, salt, and pepper.
- Take a tortilla, fill it with a portion of the chicken mixture, and roll it up tightly.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour the green salsa over the top of the enchiladas, covering them evenly.
- Sprinkle the shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Serve with a dollop of sour cream.
