Ingredients
- 2 cups cooked shredded chicken
- 8 corn tortillas
- 1 cup green salsa
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a bowl, mix the shredded chicken with green salsa, and season with salt and pepper.
- Warm the tortillas slightly to make them pliable, then fill each tortilla with the chicken mixture and roll them up.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour remaining green salsa over the top and sprinkle with shredded cheese.
- Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with sour cream and chopped cilantro.
Notes
For added flavor, let the chicken marinate in green salsa before mixing. Consider adding diced jalapeños for heat.
