Ingredients

  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1 can (4 ounces) diced green chiles
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 8 small flour or corn tortillas
  • Toppings such as sour cream, chopped cilantro, or diced onions


Instructions

  1. In a mixing bowl, combine the cooked shredded chicken, softened cream cheese, and diced green chiles. Stir until well blended and creamy.
  2. Spread a thin layer of enchilada sauce on the bottom of the baking dish to prevent sticking and add flavor.
  3. Fill each tortilla with a generous portion of the chicken mixture, then roll them up tightly. Place each rolled tortilla seam-side down in the baking dish.
