Description
A comforting and flavorful dish featuring shredded chicken, cream cheese, and zesty green chiles wrapped in soft tortillas, perfect for weeknight dinners or gatherings.
Ingredients
- 2 cups cooked shredded chicken
- 8 ounces cream cheese, softened
- 1 can (4 ounces) diced green chiles
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 8 small flour or corn tortillas
- Toppings such as sour cream, chopped cilantro, or diced onions
Instructions
- In a mixing bowl, combine the cooked shredded chicken, softened cream cheese, and diced green chiles. Stir until well blended and creamy.
- Spread a thin layer of enchilada sauce on the bottom of the baking dish to prevent sticking and add flavor.
- Fill each tortilla with a generous portion of the chicken mixture, then roll them up tightly. Place each rolled tortilla seam-side down in the baking dish.
- Once all tortillas are in place, pour the remaining enchilada sauce evenly over the top. Sprinkle shredded cheese over the sauce to create a delightful, melty topping.
- Bake in the preheated oven for 20-25 minutes or until bubbly and cheese is melted.
- Serve hot, topped with your choice of sour cream, chopped cilantro, diced onions, or any favorite toppings for added flavor and presentation.
Notes
Allow enchiladas to rest for a few minutes after baking to settle flavors. Adjust seasoning and add vegetables for a healthier version.
