Description

A comforting dish of flavorful enchiladas filled with shredded chicken, cream cheese, and green chiles, topped with melted cheese.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 can diced green chiles
  • 1 cup enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • Salt and pepper, to taste
  • Optional: cilantro, sour cream, or other toppings


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, softened cream cheese, diced green chiles, salt, and pepper.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  4. Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in the baking dish.
  5. Repeat with the remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled tortillas, ensuring they’re well covered.
  7. Sprinkle shredded cheese on top.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Serve with your choice of toppings like cilantro or sour cream.

Notes

For extra flavor, consider adding jalapeños to the filling or serving with guacamole.
