Ingredients
- 2 cups cooked shredded chicken
- 8 oz cream cheese, softened
- 1 can diced green chiles
- 1 cup enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas
- Salt and pepper, to taste
- Optional: cilantro, sour cream, or other toppings
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, softened cream cheese, diced green chiles, salt, and pepper.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in the baking dish.
- Repeat with the remaining tortillas.
- Pour the rest of the enchilada sauce over the rolled tortillas, ensuring they’re well covered.
- Sprinkle shredded cheese on top.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve with your choice of toppings like cilantro or sour cream.
Notes
For extra flavor, consider adding jalapeños to the filling or serving with guacamole.
