Description

A comforting dish of enchiladas filled with tender chicken and smothered in a spicy green chili sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) green enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 small corn tortillas
  • 1 can (4 oz) diced green chilies
  • 1 cup sour cream
  • Chopped cilantro for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together chicken, green chilies, and half of the cheddar cheese.
  3. Warm the tortillas in a skillet or microwave to make them pliable.
  4. Spread a thin layer of enchilada sauce on the bottom of your baking dish.
  5. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the filled tortillas, ensuring they are well covered.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Bake for about 25 minutes or until bubbling and golden.
  9. Serve with a dollop of sour cream and a sprinkle of chopped cilantro.

Consider adding sautéed onions or bell peppers for added sweetness and texture.
