Description
A comforting dish of enchiladas filled with tender chicken and smothered in a spicy green chili sauce.
Ingredients
- 2 cups cooked shredded chicken
- 1 can (10 oz) green enchilada sauce
- 1 cup shredded cheddar cheese
- 8 small corn tortillas
- 1 can (4 oz) diced green chilies
- 1 cup sour cream
- Chopped cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together chicken, green chilies, and half of the cheddar cheese.
- Warm the tortillas in a skillet or microwave to make them pliable.
- Spread a thin layer of enchilada sauce on the bottom of your baking dish.
- Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
- Pour the remaining enchilada sauce over the filled tortillas, ensuring they are well covered.
- Sprinkle the remaining cheddar cheese on top.
- Bake for about 25 minutes or until bubbling and golden.
- Serve with a dollop of sour cream and a sprinkle of chopped cilantro.
Notes
Consider adding sautéed onions or bell peppers for added sweetness and texture.
