Ingredients
- 1 large chicken breast, boneless skinless
- 1/2 tsp (3 ml) garlic powder (salt-free)
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) ground black pepper
- 1 Tbsp (15 ml) avocado oil (or olive oil)
- 1 tsp (5 ml) lemon juice
- 2 Tbsp (30 ml) butter, salted
- 2 garlic cloves, minced
- 1/4 tsp (1 ml) salt
- 1/2 tsp (3 ml) dried parsley
- 1/4 cup (60 ml) half and half
- 1/4 cup (60 ml) grated Parmesan cheese
Instructions
- Cut the chicken breast into small, bite-sized pieces.
- Combine the chicken pieces with garlic powder, salt, pepper, avocado oil, and lemon juice in a bowl.
- Note: If desired, you can let the chicken marinate in the refrigerator for up to 6 hours, but this step is optional.
- Preheat your grill (either indoor or outdoor) to a medium setting, around 350 degrees Fahrenheit.
- Once the grill is ready, arrange the chicken pieces on it, ensuring they are not touching each other. Grill for 4-5 minutes.
- Turn the chicken pieces over and grill for another 4-5 minutes or until thoroughly cooked. You can check doneness by cutting one open or using a meat thermometer.
- While the chicken cooks, prepare the creamy garlic sauce by melting butter in a small saucepan over medium heat on the stove.
- When the butter is fully melted, incorporate the minced garlic, salt, parsley, and half and half.
- Mix everything together and let it heat gently for 4-5 minutes until warmed through.
- Reduce the heat to low, then whisk in the grated Parmesan until it’s melted and the sauce is smooth. Remove from heat and hold until the chicken is done.
- Once the chicken is cooked, serve it with the garlic sauce drizzled over the top and enjoy!
