Description

A flavorful and healthy dish combining grilled chicken, vibrant broccoli, and a creamy garlic sauce, served over rice or quinoa.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/2 cup Greek yogurt
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp paprika
  • Cooked rice or quinoa (for serving)


Instructions

  1. Marinate the chicken breasts with salt, black pepper, and 1 tbsp olive oil.
  2. Grill the chicken until fully cooked, reaching an internal temperature of 165°F. Once cooked, slice the chicken.
  3. Toss the broccoli florets with the remaining olive oil, salt, and pepper. Roast in an oven preheated to 400°F for 15-20 minutes until tender.
  4. In a bowl, mix Greek yogurt, minced garlic, lemon juice, parsley, and paprika to create the creamy sauce.
  5. Serve the sliced chicken and roasted broccoli over a bed of cooked rice or quinoa. Drizzle with the creamy sauce and garnish as desired.

Notes

For variations, you can add different vegetables like bell peppers or zucchini. Adjust the garlic in the sauce to your taste.
