Learn how to make a delicious Grilled Chicken Cobb Salad with Honey Dijon dressing. This recipe is perfect for a healthy and satisfying meal!
Ingredients
- 3 tbsp honey (45 ml)
- 1/4 cup (60 ml) beef mustard
- 2 tbsp fresh lemon juice or white vinegar (30 ml)
- 1/4 cup avocado oil (60 ml)
- 1/4 tsp (1 ml) sea salt
- 3-4 boneless skinless chicken breasts, about 1 1/2 lbs (680 g)
- 1 tsp (5 ml) sea salt
- 1/2 tsp (3 ml) black pepper
- 1/2 tsp (3 ml) garlic powder
- 1/2 tsp (3 ml) onion powder
- 1 tbsp (15 ml) avocado oil for the grill or pan
- 8 cups chopped romaine, kale, or other greens, or a mix (180 g)
- 3/4 cup cherry tomatoes, halved (180 ml)
- 1/2 red onion, thinly sliced
- 1 medium cucumber, peeled and sliced
- 1 large avocado, thinly sliced
- 8 slices beef bacon, cooked until crisp, and chopped or crumbled*
- 6 hard boiled eggs, sliced**
Instructions
- For the dressing, you can either stir it together in a bowl while gradually pouring in the oil until everything is fully blended, or opt for an immersion blender. If you choose the blender, put all the ingredients in a tall container and blend until smooth and well-mixed. Personally, I prefer using an immersion blender for a thicker and creamier result. Once complete, set it aside or chill it for later use.
- Mix the salt, pepper, garlic, and onion powder in a small dish and coat the chicken thoroughly. Preheat your grill or a grill pan to a medium to medium-high setting and lightly coat it with oil. When it’s hot, place the chicken on it and grill for approximately 5 minutes on each side or until fully cooked. The chicken’s internal temperature should reach 165°F. Transfer to a cutting board and let it rest.
- In a spacious serving dish, arrange the salad greens followed by the tomatoes, red onion, cucumber, avocado, crispy bacon bits, and sliced hard-boiled eggs. Slice the grilled chicken thinly and add it to the salad as you like. Pour the dressing over everything and toss, or offer it separately. Enjoy your meal!
