Ingredients
- 2 chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 4 cups lettuce, chopped
- 4 slices cooked bacon, crumbled
- 1 avocado, diced
- 1 cup corn
- 1/2 cup blue cheese, crumbled
- 1 cup tomatoes, diced
Instructions
- Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for about 6-7 minutes on each side until fully cooked.
- While the chicken is cooking, prepare the salad.
- In a large bowl, combine lettuce, cooked bacon, diced avocado, corn, crumbled blue cheese, and chopped tomatoes.
- Once the chicken is done, slice it and add it to the salad.
- Toss the salad gently and serve.
