Ingredients

  • – 1/2 cup (120 ml) plain full fat Greek yogurt
  • – 1/4 cup (60 ml) olive oil
  • – 1 tsp (5 ml) lemon zest
  • – 3 Tbsp (45 ml) lemon juice fresh tastes best
  • – 1 Tbsp (15 ml) red grape vinegar
  • – 7 cloves garlic grated or finely minced
  • – 1 tsp (5 ml) Dijon mustard
  • – 2 tsp (10 ml) dried oregano
  • – 1 tsp (5 ml) dried parsley
  • – 1 tsp (5 ml) dried thyme
  • – 1 tsp (5 ml) kosher salt
  • – 1/2 tsp (3 ml) black pepper
  • – pinch red pepper flakes or crushed red pepper
  • – 1 1/2 lbs (680 g) boneless skinless chicken thighs trimmed of excess fat and sliced into 1 or 1 1/2 inch cubes
  • – 1 red onion sliced into 1 or 1 1/2 inch squares
  • – 1 bell pepper (any color) seeded and sliced into 1 or 1 1/2 inch squares
  • – 1 medium zucchini sliced into 1 or 1 1/2 inch circles
  • – chopped fresh parsley
  • – crumbled feta cheese
  • – lemon wedges


Instructions

  1. Combine all the marinade components in a mixing bowl and whisk thoroughly until well blended.
  2. Introduce the chicken cubes to the marinade, ensuring they are evenly coated. Cover the mixture and place it in the refrigerator for a minimum of 2 hours, and up to 24 hours for best results.
  3. If you are using wooden skewers, immerse them in water for at least 30 minutes to prevent excessive burning when grilling.
  4. Clean the grill grates and set the grill to preheat at a medium-high setting.
  5. As the grill warms up, drain the chicken using a sieve to remove extra marinade, then thread the chicken pieces onto the skewers. Alternate between two chicken pieces, red onion, zucchini, and bell pepper, and continue until the skewers are filled.
  6. Arrange the skewers on a baking sheet lined with wax paper for easy transfer to the grill.
  7. Once the grill is sufficiently hot, place the skewers on it, close the grill lid, and cook for 8-10 minutes, turning them once or twice during the process. The chicken should develop a golden-brown color with slight charring and be fully cooked.
  8. Transfer the chicken skewers to a serving platter, and if desired, garnish with chopped parsley and crumbled feta. Place lemon wedges around the platter, and serve with tzatziki sauce and warm pita bread if you like.
