Ingredients

  • 2 medium zucchini
  • 1 pound (454 g) boneless, skinless chicken breasts (about 450 grams)
  • 1 tablespoon olive oil (15 ml)
  • 2 tablespoon s honey (30 ml)
  • Juice of 1 lime
  • 1 teaspoon (5 ml) lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) chili powder
  • 1 teaspoon (5 ml) ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
  • 1/4 cup (60 ml) shredded moz zarella cheese (about 25 grams)


Instructions

  1. Preheat your grill to medium-high heat.
  2. Slice the zucchini in half lengthwise and scoop out the center to create boats.
  3. Brush the zucchini boats with olive oil and season with salt and pepper.
  4. Place the zucchini on the grill, cut side down, and grill for 5-7 minutes until slightly tender.
  5. While the zucchini is grilling, season the chicken breasts with salt, pepper, chili powder, and cumin.
  6. In a small bowl, mix together the honey, lime juice, lime zest, and minced garlic.
  7. Brush the honey lime mixture over the seasoned chicken breasts.
  8. Grill the chicken breasts for about 6-7 minutes per side, until fully cooked.
  9. Remove the chicken from the grill and let it rest for a few minutes.
  10. Dice the grilled chicken into small cubes.
  11. In a mixing bowl, combine the diced chicken with chopped cilantro.
  12. Fill each zucchini boat with the chicken mixture.
  13. Sprinkle shredded mozzarella cheese evenly over the stuffed zucchini.
  14. Return the stuffed zucchini to the grill, cover, and cook for 3-5 minutes until the cheese melts.
  15. Remove the zucchini boats from the grill and let them cool for a minute.
  16. Serve immediately, garnished with additional cilantro if desired.
