Description

A flavorful dish featuring grilled chicken marinated in a vibrant blend of lemon, garlic, and rosemary. Perfect for summer gatherings and easy weeknight dinners.

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1/4 cup extra virgin olive oil
  • 6 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 4 tbsp chopped fresh rosemary
  • 2 tsp kosher salt

Instructions

  1. Cut the chicken fillets in half lengthwise.
  2. Place them in a large bowl along with the olive oil, minced garlic, lemon juice, chopped rosemary, and kosher salt.
  3. Mix well to ensure all the chicken is evenly coated with the marinade.
  4. Cover and marinate in the refrigerator for 2-3 hours.
  5. Preheat the grill over medium heat.
  6. Grill the marinated chicken for 10-15 minutes, turning occasionally until fully cooked and no longer pink in the middle.
  7. Remove from the grill and let rest for a few minutes before slicing.

Notes

Consider letting the chicken rest after grilling for optimal juiciness. Pair with grilled vegetables or a light salad for a complete meal.
