Description

A delightful summer recipe combining juicy chicken thighs with the sweetness of ripe mangos, perfect for BBQs and gatherings.


Ingredients

  • 2 lb. boneless skinless chicken thighs
  • ½ cup soy sauce
  • 2 ripe mangos
  • 3 garlic cloves
  • ½ teaspoon fresh grated ginger
  • 2 tablespoons water, or more as needed
  • Fresh cilantro for garnish


Instructions

  1. Add chicken to a large plastic bag or baking dish and set aside.
  2. In a blender, combine soy sauce, peeled and diced mangos, garlic, ginger, and water, and pulse until smooth.
  3. Reserve about ¼ cup of the sauce for later and pour the remaining marinade over the chicken.
  4. Seal the bag tightly or cover the dish with plastic wrap and refrigerate for 2 to 8 hours.
  5. Preheat the grill to 400°F.
  6. Remove chicken from the marinade and grill for 6-7 minutes on each side until fully cooked.
  7. Brush with reserved marinade before serving and garnish with chopped cilantro.

Notes

For added flavor, consider substituting peaches or pineapples for mangos. Use a meat thermometer to ensure chicken reaches at least 165°F.
