A delightful summer recipe combining juicy chicken thighs with the sweetness of ripe mangos, perfect for BBQs and gatherings.
Ingredients
- 2 lb. boneless skinless chicken thighs
- ½ cup soy sauce
- 2 ripe mangos
- 3 garlic cloves
- ½ teaspoon fresh grated ginger
- 2 tablespoons water, or more as needed
- Fresh cilantro for garnish
Instructions
- Add chicken to a large plastic bag or baking dish and set aside.
- In a blender, combine soy sauce, peeled and diced mangos, garlic, ginger, and water, and pulse until smooth.
- Reserve about ¼ cup of the sauce for later and pour the remaining marinade over the chicken.
- Seal the bag tightly or cover the dish with plastic wrap and refrigerate for 2 to 8 hours.
- Preheat the grill to 400°F.
- Remove chicken from the marinade and grill for 6-7 minutes on each side until fully cooked.
- Brush with reserved marinade before serving and garnish with chopped cilantro.
Notes
For added flavor, consider substituting peaches or pineapples for mangos. Use a meat thermometer to ensure chicken reaches at least 165°F.
