Description
A vibrant and flavorful grilled chicken recipe marinated with ripe mango and zesty lime, perfect for summer gatherings.
Ingredients
- 4 chicken breasts
- 1 ripe mango
- Zest of 1 lime
- 1 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp coconut aminos
- 1 tsp hot sauce
- 1 tbsp maple syrup or honey
- Pinch of salt
- Pinch of black pepper
Instructions
- Place all marinade ingredients into the blender and blend on medium speed until smooth.
- Reserve 1/4 cup of the marinade in a glass container and refrigerate.
- Cover the chicken breasts with the remaining marinade and seal the bowl.
- Let the chicken marinate in the fridge for at least 4 hours (max 8 hours).
- Preheat the grill just before removing chicken from the marinade.
- Remove chicken from the marinade and grill, flipping every 10 minutes until it reaches 165°F internally.
- Let the chicken rest for about 5 minutes after grilling.
- Brush reserved marinade on the chicken just before serving.
