Description

A vibrant and flavorful grilled chicken recipe marinated with ripe mango and zesty lime, perfect for summer gatherings.


Ingredients

  • 4 chicken breasts
  • 1 ripe mango
  • Zest of 1 lime
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp coconut aminos
  • 1 tsp hot sauce
  • 1 tbsp maple syrup or honey
  • Pinch of salt
  • Pinch of black pepper


Instructions

  1. Place all marinade ingredients into the blender and blend on medium speed until smooth.
  2. Reserve 1/4 cup of the marinade in a glass container and refrigerate.
  3. Cover the chicken breasts with the remaining marinade and seal the bowl.
  4. Let the chicken marinate in the fridge for at least 4 hours (max 8 hours).
  5. Preheat the grill just before removing chicken from the marinade.
  6. Remove chicken from the marinade and grill, flipping every 10 minutes until it reaches 165°F internally.
  7. Let the chicken rest for about 5 minutes after grilling.
  8. Brush reserved marinade on the chicken just before serving.

For optimal flavor, stick to the recommended marination time. Choose a ripe mango for maximum sweetness.
