Ingredients

  • 450 g large raw shrimp, peeled and deveined (1 lb)
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 ml) granulated garlic
  • 1 teaspoon (5 ml) smoked paprika
  • salt and pepper to taste
  • 4 (10 inch) low-carb flour tortillas
  • 2 cups chopped Romaine lettuce (470 ml)
  • 1 cup croutons, coarsely chopped (240 ml)
  • 1/2 cup (120 ml) creamy Caesar yogurt dressing


Instructions

  1. Mix the shrimp with olive oil, smoked paprika, granulated garlic, and a pinch of salt and pepper in a big bowl. Stir until the shrimp are well-coated, then let them sit for 15 minutes to absorb the flavors.
  2. Heat up your grill or grill pan to a high temperature. If using an outdoor grill, thread the shrimp onto skewers. Cook the shrimp until they turn pink on the outside and are cooked through, about 2 to 3 minutes per side, then transfer them to a plate. Briefly warm the tortillas on the grill for 10 to 15 seconds on each side.
  3. Cut the shrimp into half-inch pieces and place them in a large bowl. Combine with the lettuce, chopped croutons, and Caesar dressing. Evenly distribute this mixture down the middle of each tortilla. Tuck in the sides of the tortillas, then roll them up tightly from the bottom. Slice the wraps in half at an angle and serve.
