Ingredients

  • 1 pound (454 g) (450 grams) ground turkey
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1 teaspoon (5 ml) (5 grams) ground cumin
  • 1 teaspoon (5 ml) (5 grams) smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tablespoon (15 ml) lime juice
  • 8 large lettuce leaves for wrapping
  • For the Pineapple Slaw:
  • 2 cup (480 ml) s (300 grams) shredded cabbage
  • 1 cup (240 ml) (150 grams) fresh pineapple, diced
  • 1/4 cup (60 ml) (30 grams) shredded carrots
  • 2 tablespoon s (30 ml) mayonnaise
  • 1 tablespoon (15 ml) lime juice
  • 1 teaspoon (5 ml) (5 grams) honey
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey to the skillet and cook until browned, about 5-7 minutes.
  3. Stir in garlic powder, onion powder, ground cumin, and smoked paprika.
  4. Season the turkey with salt and black pepper to taste.
  5. Add sliced red and yellow bell peppers and sliced red onion to the skillet.
  6. Cook the vegetables with the turkey for an additional 5 minutes, until tender.
  7. Stir in lime juice and mix well.
  8. Remove the skillet from heat and set aside.
  9. In a large bowl, combine shredded cabbage, diced pineapple, and shredded carrots.
  10. In a small bowl, whisk together mayonnaise, lime juice, and honey.
  11. Pour the dressing over the cabbage mixture and toss to combine.
  12. Season the slaw with salt and black pepper to taste.
  13. Lay out the large lettuce leaves on a clean surface.
  14. Spoon the turkey and veggie mixture onto the center of each lettuce leaf.
  15. Top each with a generous portion of pineapple slaw.
  16. Fold the lettuce leaves around the filling to form tacos.
