Description

Classic Ground Beef Enchiladas bring savory flavors and a delightful twist to family dinners, perfect for gatherings or weeknight meals.

Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef and onions over medium heat for 5-7 minutes until onions are translucent.
  3. Add minced garlic, cumin, and chili powder, and sauté for one additional minute.
  4. Spoon the beef mixture onto each tortilla, roll them tightly, and place them seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled tortillas, ensuring each one is well covered.
  6. Sprinkle shredded cheese on top.
  7. Bake uncovered for 20-25 minutes until bubbly and golden.

Notes

For an extra kick, add a dash of lime juice or chopped cilantro to the beef mixture. Use fresh tortillas and quality enchilada sauce for the best flavor.
