Description

A comforting and flexible dish featuring a blend of ground chicken, rice, and mixed vegetables, perfect for any occasion.


Ingredients

  • 2 cups cooked rice
  • 1 lb ground chicken
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the ground chicken and cook until browned and fully cooked.
  3. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.
  4. Mix the chicken and eggs together.
  5. Add the cooked rice and mixed vegetables to the skillet.
  6. Pour in the soy sauce and stir well to combine.
  7. Cook for an additional 3-5 minutes, stirring occasionally, until everything is heated through.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions and serve hot.
