Ingredients
- 2 cups cooked rice
- 1 lb ground chicken
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the ground chicken and cook until browned and fully cooked.
- Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.
- Mix the chicken and eggs together.
- Add the cooked rice and mixed vegetables to the skillet.
- Pour in the soy sauce and stir well to combine.
- Cook for an additional 3-5 minutes, stirring occasionally, until everything is heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve hot.
