Description

A comforting dish of ground chicken baked with marinara sauce, mozzarella, and crispy breadcrumbs.


Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup panko breadcrumbs
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning
  • 1 tablespoon oil
  • 1 small onion, diced
  • 1 teaspoon salt (divided in half)
  • 4 cloves garlic, roughly chopped
  • 2 pounds ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 770 mL marinara sauce (1 jar Rao’s)
  • 1 cup grated parmesan
  • 2 sprigs basil
  • to 2 cups shredded mozzarella cheese


Instructions

  1. In a small skillet, melt the butter over medium heat. Add panko breadcrumbs, ¼ teaspoon salt, garlic powder, onion powder, and Italian seasoning; stir until golden, then set aside.
  2. Heat oil in a large skillet over medium heat, add diced onion and sauté until translucent (3-4 minutes). Add chopped garlic and cook for an additional minute.
  3. In a mixing bowl, combine ground chicken, ½ teaspoon salt, garlic powder, onion powder, and oregano; mix until well incorporated.
  4. Add the ground chicken mixture to the skillet, breaking up the meat as it cooks (6-8 minutes until no longer pink).
  5. Pour in the marinara sauce and stir; let simmer for 5 minutes.
  6. Preheat oven to 375°F (190°C).
  7. In a baking dish, layer the chicken and marinara mixture, sprinkle with parmesan, then layer mozzarella on top, and finally, add toasted breadcrumbs.
  8. Bake for 25-30 minutes until cheese is bubbly and golden brown.

Notes

Let the dish rest for a few minutes after baking to allow flavors to settle.
