Ingredients
- 1 pound ground chicken
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, chopped cilantro
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon.
- Stir in taco seasoning, black beans, corn, salsa, and cooked rice. Mix until well combined.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
- Serve with your choice of toppings.
Notes
For a spicier dish, adjust the salsa to your preference. Leftovers store well in the fridge and can be reheated easily.
