Description

Ingredients

  • 1 pound ground chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, chopped cilantro


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon.
  3. Stir in taco seasoning, black beans, corn, salsa, and cooked rice. Mix until well combined.
  4. Transfer the mixture to a baking dish and top with shredded cheese.
  5. Bake for 20 minutes or until the cheese is melted and bubbly.
