Description

A delightful bowl featuring savory chicken, vibrant vegetables, and sweet pineapple, served over rice, perfect for creating joyful family memories.


Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup canned pineapple chunks (drained, juice reserved)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground ginger
  • 2 cups cooked jasmine or brown rice
  • 1/2 cup red bell pepper (diced)
  • 1/4 cup green onion (sliced)
  • 1 tablespoon sesame seeds (optional, for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until golden brown and fully cooked, about 6-7 minutes. Remove from skillet.
  3. In the same skillet, add a splash of reserved pineapple juice and sauté pineapple chunks and diced red bell pepper for 3-4 minutes until softened.
  4. Whisk together soy sauce, honey, minced garlic, ground ginger, and cornstarch with 2 tablespoons reserved pineapple juice.
  5. Pour the sauce into the skillet and stir until thickened, about 2-3 minutes.
  6. Return chicken to the skillet and toss to coat with the sauce. Simmer for 1-2 minutes.
  7. Serve over warm jasmine or brown rice, topped with green onions and sesame seeds.

Notes

Allow chicken to rest before cutting to preserve juices. For added texture, consider pan-searing instead of stir-frying.
