Description

A delightful blend of grilled chicken, sweet pineapple, and creamy coconut rice that brings tropical flavors to your dinner table.


Ingredients

  • 2 Chicken breasts
  • 1 Pineapple, sliced
  • 1 cup Coconut milk
  • 1 cup Rice
  • 4 tablespoons Soy sauce
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive oil


Instructions

  1. Marinate the chicken breasts in soy sauce, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or pan fry the chicken until cooked through.
  3. Combine rice and coconut milk in a pot, and cook according to rice package instructions.
  4. Grill pineapple slices until caramelized.
  5. Serve the chicken with coconut rice and grilled pineapple on the side.
