Ingredients
- 2 Chicken breasts
- 1 Pineapple, sliced
- 1 cup Coconut milk
- 1 cup Rice
- 4 tablespoons Soy sauce
- 3 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Olive oil
Instructions
- Marinate the chicken breasts in soy sauce, minced garlic, salt, and pepper for at least 30 minutes.
- Grill or pan fry the chicken until cooked through.
- Combine rice and coconut milk in a pot, and cook according to rice package instructions.
- Grill pineapple slices until caramelized.
- Serve the chicken with coconut rice and grilled pineapple on the side.
