Description

A vibrant dish capturing the flavors of Hawaii with juicy grilled chicken, sweet pineapple, and creamy coconut rice.


Ingredients

  • 4 Chicken breasts
  • 2 Pineapple slices
  • 1 cup Coconut milk
  • 1 cup Rice
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional: Chopped green onions for garnish


Instructions

  1. Rinse the rice and cook it according to package instructions, substituting water with coconut milk for extra flavor.
  2. Season the chicken breasts with salt and pepper.
  3. Grill or pan-fry the chicken until cooked through and golden brown.
  4. Grill the pineapple slices until they have nice grill marks.
  5. Serve the chicken on a bed of coconut rice, topped with grilled pineapple.
  6. Garnish with chopped green onions if desired.

Notes

For best flavor, allow chicken to marinate for at least 30 minutes. You can substitute pineapple for mango or papaya for a different variation.
