Ingredients
- 4 Chicken breasts
- 2 Pineapple slices
- 1 cup Coconut milk
- 1 cup Rice
- 2 tablespoons Olive oil
- Salt, to taste
- Pepper, to taste
- Optional: Chopped green onions for garnish
Instructions
- Rinse the rice and cook it according to package instructions, substituting water with coconut milk for extra flavor.
- Season the chicken breasts with salt and pepper.
- Grill or pan-fry the chicken until cooked through and golden brown.
- Grill the pineapple slices until they have nice grill marks.
- Serve the chicken on a bed of coconut rice, topped with grilled pineapple.
- Garnish with chopped green onions if desired.
Notes
