A quick and satisfying Hawaiian chicken sheet pan dinner with flavorful chicken, fresh vegetables, and sweet pineapple, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooked rice for serving (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the soy sauce, honey, olive oil, garlic powder, salt, and pepper to create the marinade.
  3. Place the chicken breasts on a sheet pan and pour the marinade over them, ensuring even coverage.
  4. Arrange the pineapple chunks, red and green bell peppers, and sliced onion around the chicken.
  5. Bake in the preheated oven for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  6. Serve over rice and garnish with chopped green onions if desired.

Notes

Marinating the chicken for at least 30 minutes or overnight can enhance flavor. Feel free to add different vegetables or spices according to your taste.
