Description

Hawaiian Chicken features succulent chicken thighs coated in a luscious marinade of pineapple and soy sauce, achieving a perfect balance of sweet and savory flavors.

Ingredients

  • 2 lbs chicken thighs
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup green onions, chopped
  • 1 tablespoon sesame oil

Instructions

  1. In a bowl, mix soy sauce, brown sugar, garlic, ginger, and sesame oil to create a marinade.
  2. Add chicken thighs and pineapple chunks to the marinade, coating them well.
  3. Let the mixture marinate for at least 30 minutes.
  4. Preheat the grill or skillet over medium heat.
  5. Cook the marinated chicken for 5-7 minutes on each side, or until fully cooked.
  6. Serve the chicken topped with the remaining pineapple chunks and garnish with green onions.

Notes

For added flavor, reserve a small amount of marinade to brush on the chicken while cooking. Use a meat thermometer to ensure chicken reaches 165°F.
