Ingredients
- 2 tablespoon (30 ml) s olive oil, divided
- 1 pound (454 g) boneless skinless chicken breasts, cut into 1-inch pieces
- Salt and fresh ground black pepper, to taste
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 1/2 teaspoon (3 ml) dried thyme
- 1/2 teaspoon (3 ml) dried rosemary
- 1/2 teaspoon (3 ml) paprika
- 1/4 to 1/2 teaspoon (3 ml) chili powder
- 1 small yellow onion, thinly sliced
- 3 cup (720 ml) s bite-size broccoli florets
- 1 zucchini, thinly sliced and cut into half-moons
- 1 small yellow bell pepper, cut into 1-inch chunks
- 1 small red bell pepper, cut into 1-inch chunks
- 1/4 cup (60 ml) low sodium chicken broth, you can also use dry white grape juice, apple juice, or water
- Chopped fresh parsley, for garnish
Instructions
- Slice the chicken into 1-inch cubes and season it with salt and pepper; put it aside.
- In a small bowl, mix together garlic powder, onion powder, thyme, rosemary, paprika, and chili powder; use half of this blend to season the chicken.
- Drizzle ½ tablespoon of olive oil over the chicken and toss to ensure it’s evenly coated.
- Warm 1 tablespoon of olive oil in a large 12-inch skillet over medium-high heat. Place the chicken pieces into the hot oil and cook for about 6 to 8 minutes until they are browned and thoroughly cooked.
- Take the chicken out of the skillet and place it on a plate, keeping it covered.
- Put the skillet back on the heat and pour in the remaining olive oil. Add the onions and cook for 2 minutes. Mix in the broccoli, zucchini, and peppers, adding extra oil if necessary. Season with the leftover spice mixture, salt, and pepper, and continue cooking for 4 to 6 minutes until the vegetables are crisp-tender, stirring now and then.
- Pour in the chicken broth.
- Return the chicken along with any juices to the skillet; stir everything together and cook for another minute.
- Remove from heat. Taste and adjust the salt if necessary.
- Sprinkle with parsley before serving.
