Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil (15 ml)
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 teaspoon garlic powder (5 ml)
- 1 teaspoon onion powder (5 ml)
- 1 teaspoon dried oregano (5 ml)
- 1 teaspoon dried basil (5 ml)
- Salt, to taste
- Black pepper, to taste
- 1 lemon, juiced
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels.
- Season the chicken with garlic powder, onion powder, oregano, basil, salt, and black pepper.
- Heat the olive oil in an ovenproof skillet over medium-high heat.
- Add the chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced zucchini and yellow squash.
- Season the vegetables with salt and black pepper.
- Sauté the vegetables for 5 minutes, stirring occasionally.
- Return the chicken breasts to the skillet, placing them on top of the vegetables.
- Squeeze the lemon juice over the chicken and vegetables.
- Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the skillet from the oven and let it rest for 5 minutes before serving.
