Description

A quick and nutritious twist on classic burritos, this casserole combines shredded chicken, beans, corn, and cheese in a baked dish that the whole family will love.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 can diced tomatoes
  • 2 cups cooked rice
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (your choice)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, salt, and pepper.
  3. Mix well to ensure even distribution of the ingredients.
  4. Pour the mixture into a greased baking dish and spread it out evenly.
  5. Top with a generous layer of shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes or until the cheese is golden and bubbly.
