Description

A healthier twist on the classic chicken parmesan featuring baked, crispy chicken cutlets topped with marinara sauce and melted mozzarella.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce
  • 1 cup whole wheat breadcrumbs
  • ½ cup grated Parmesan cheese
  • Black pepper (to taste)
  • Dried basil (to taste)
  • Dried parsley (to taste)


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Butterfly and pound the chicken breasts to about ¼ inch thick for even cooking.
  3. Set up three shallow bowls: one with flour, one with whisked eggs, and one with breadcrumbs mixed with Parmesan cheese, black pepper, dried basil, and dried parsley.
  4. Dredge each chicken cutlet in flour, dip in the egg, then coat in the breadcrumb mixture.
  5. Place the breaded cutlets on the baking sheet and bake for 30 minutes, flipping halfway through.
  6. Top each cutlet with marinara sauce and mozzarella. Broil for an additional 2 minutes until the cheese melts.

Notes

Rest the breaded chicken for a few minutes before baking for a crispier coating. Use a meat thermometer for perfect doneness.
