A healthier twist on the classic chicken parmesan featuring baked, crispy chicken cutlets topped with marinara sauce and melted mozzarella.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- ½ cup whole wheat flour
- 3 large eggs
- 1.5 cups shredded mozzarella
- 1.5 cups marinara sauce
- 1 cup whole wheat breadcrumbs
- ½ cup grated Parmesan cheese
- Black pepper (to taste)
- Dried basil (to taste)
- Dried parsley (to taste)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Butterfly and pound the chicken breasts to about ¼ inch thick for even cooking.
- Set up three shallow bowls: one with flour, one with whisked eggs, and one with breadcrumbs mixed with Parmesan cheese, black pepper, dried basil, and dried parsley.
- Dredge each chicken cutlet in flour, dip in the egg, then coat in the breadcrumb mixture.
- Place the breaded cutlets on the baking sheet and bake for 30 minutes, flipping halfway through.
- Top each cutlet with marinara sauce and mozzarella. Broil for an additional 2 minutes until the cheese melts.
Notes
Rest the breaded chicken for a few minutes before baking for a crispier coating. Use a meat thermometer for perfect doneness.
