A healthier twist on a classic Chicken Parmesan that keeps the flavors while boosting nutrition using whole wheat ingredients.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- ½ cup whole wheat flour
- 3 large eggs
- 1.5 cups shredded mozzarella cheese
- 1.5 cups marinara sauce
- 1 cup unseasoned whole wheat bread crumbs
- ½ cup grated Parmesan cheese
- ¼ teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Butterfly the chicken breasts and pound them to approximately ¼ inch thick.
- Set up a breading station with three shallow bowls: one with whole wheat flour, one with whisked eggs, and one with breadcrumbs, Parmesan cheese, black pepper, basil, and parsley.
- Coat each chicken cutlet in flour, then dip in the egg mixture, and finally press into the breadcrumb blend.
- Place the breaded cutlets on the prepared baking sheet.
- Bake for 30 minutes, flipping halfway through.
- Top each cutlet with marinara sauce and mozzarella cheese, then broil for an additional 2 minutes until the cheese melts.
Notes
Consider using smaller chicken pieces for a crunchier texture. Experiment with different spices in the breadcrumb mixture for added flavor.
