Ingredients

  • 1 tbsp extra virgin olive oil
  • 1.5 lb boneless skinless chicken breasts (4-5 small breasts)
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh minced garlic
  • 1 small yellow onion, finely diced
  • 24 oz grape tomatoes, halved
  • 1 cup chicken broth
  • 2 tbsp chopped fresh basil
  • 1 tsp white sugar
  • Parmesan cheese


Instructions

  1. Start by mixing the Italian seasoning, garlic powder, salt, and black pepper in a small bowl.
  2. Coat the chicken breasts thoroughly with the seasoning mix, rubbing it into both sides evenly.
  3. Heat olive oil in a large skillet over medium-high heat until hot.
  4. Add the seasoned chicken breasts to the skillet. Sear for about 2 minutes on one side, then flip and sear for another 2 minutes. Remove the chicken from the skillet and set aside.
  5. With the heat lowered, add minced garlic and diced onion to the same skillet. Sauté for 1-2 minutes, ensuring nothing burns.
  6. Stir in the halved grape tomatoes and chicken broth. Combine thoroughly, scraping up any browned bits from the bottom of the pan. Allow the mixture to simmer at medium-high heat for about 5 minutes.
  7. Add chopped fresh basil and white sugar, mixing well. Return the seared chicken breasts to the skillet, nestling them into the sauce. Simmer for an additional 5-8 minutes, ensuring the chicken is cooked through.
  8. Top with extra fresh basil and a sprinkle of Parmesan cheese before serving.

Notes

For a thicker sauce, let the tomato mixture simmer a bit longer. Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F.
