Ingredients
- 4 cups (946 ml) shredded chicken
- 3 tbsp (45 ml) vegetable oil
- 3 cups (720 ml) frozen mixed vegetables
- 1 cup (240 ml) finely chopped yellow onions
- 3 garlic cloves
- 1 tsp (5 g) dried mixed herbs (Italian seasoning or Herb de Provence)
- 3 tbsp (23 g) all-purpose flour (plain flour)
- 1 bay leaf
- 1 thyme sprig, remove from stalk
- 1/2 tsp (3 ml) red pepper flakes
- 1/3 cup (80 ml) milk
- 2 1/2 cups (590 ml) beef broth or as needed
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a skillet on medium flame, then toss in the finely chopped onions and garlic cloves, cooking until they’re tender and aromatic.
- Introduce the frozen mixed vegetables, thyme sprig, and dried mixed herbs to the skillet, stirring well and cooking for 3 to 5 minutes. If the vegetables cause the mixture to firm up, just keep stirring, as the warmth will soften them.
- Dust the vegetables with all-purpose flour and mix thoroughly. Pour in the beef broth, stirring continuously as it thickens. Season with salt, pepper, and red pepper flakes, then add the shredded chicken and bay leaf, combining everything well.
- Finally, pour in the milk and stir thoroughly. Lower the heat to medium-low and let it simmer for 8 to 10 minutes, adjusting the seasoning as needed. If the mixture becomes too thick, add more broth or water to thin it out. Remove from heat and serve hot. Enjoy!
