Description

Delicious low-calorie chicken enchiladas filled with tender shredded chicken, zesty enchilada sauce, and gooey cheese, perfect for a satisfying meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup low-fat cheddar cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1/2 cup black beans (optional)
  • 1/2 cup diced onions
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the shredded chicken, black beans, onion, cumin, salt, and pepper.
  3. Warm the tortillas in a pan to make them pliable.
  4. Spoon the chicken mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. Pour the enchilada sauce over the rolled tortillas, spreading it evenly.
