Ingredients

  • – 2 15 oz (425 g). cans cannellini beans, drained and rinsed ($1.88)
  • – 1 15 oz (425 g). can pinto beans, drained and rinsed ($0.94)
  • – 1 Tbsp (15 ml) ground cumin ($0.30)
  • – 1 tsp (5 ml) dried oregano ($0.10)
  • – 1/4 tsp (1 ml) cayenne pepper* ($0.02)
  • – 1/4 tsp (1 ml) freshly ground black pepper ($0.02)
  • – 1 16 oz (454 g). jar salsa verde ($2.92)
  • – 2 cups chicken broth (480 ml) ($0.24)


Instructions

  1. Chop the onion into small pieces and finely chop the garlic. Cut the jalapeño in half lengthwise, remove the seeds with a spoon, then dice it. Place the onion, garlic, jalapeño, and chicken breast at the base of a slow cooker.
  2. Rinse and drain the cannellini and pinto beans before adding them to the slow cooker. Include the cumin, oregano, cayenne, and black pepper. Pour the salsa verde over the top.
  3. Add two cups of chicken broth to the slow cooker, then stir everything briefly. Cover with the lid and set the slow cooker to high for four hours or low for eight hours.
  4. Once the time is up, take off the lid and use two forks to shred the chicken directly in the slow cooker, or remove it to shred on a cutting board before returning it. Mix the chili, gently squashing some beans with the spoon to thicken the mixture.
  5. Serve the chili with optional toppings such as grated cheese, fresh cilantro, diced avocado, lime juice, or tortilla chips.
