A comforting and nutritious casserole combining chicken, spinach, and artichoke in a creamy base.
Ingredients
- 2 cooked skinless chicken breasts, shredded or cubed
- 2 tablespoons avocado oil, melted grass-fed butter, or ghee
- 1/2 cup organic whole milk cottage cheese
- 3/4 cup organic sour cream
- 2 cups shredded mozzarella cheese (divided)
- 1/4 cup chopped fresh Italian parsley
- 1 teaspoon mineral-rich salt
- 1 1/2 teaspoons garlic granules or garlic powder
- 1 teaspoon dried thyme
- Juice and zest of 1/2 lemon
- 2 cups fresh organic spinach
- 18 oz drained artichoke hearts, halved
Instructions
- Preheat your oven to 375 degrees F.
- Grease the casserole dish using your chosen healthy fat.
- In a large mixing bowl, combine the shredded chicken, healthy fat, cottage cheese, and sour cream.
- Mix well, followed by adding 1 1/2 cups shredded mozzarella, parsley, salt, garlic, thyme, lemon juice, and zest. Stir until evenly distributed.
- Fold in the fresh spinach and artichoke hearts until combined.
- Pour the mixture into the greased casserole dish.
- Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the top.
- Bake in the oven for 40-50 minutes until the cheesy topping is lightly golden brown.
- Allow the casserole to cool for 10 minutes before serving.
Notes
Use cooked chicken that has been seasoned for best flavor. For a vegetarian option, omit the chicken and substitute with beans or lentils.
