Description

A comforting and nutritious casserole combining chicken, spinach, and artichoke in a creamy base.


Ingredients

  • 2 cooked skinless chicken breasts, shredded or cubed
  • 2 tablespoons avocado oil, melted grass-fed butter, or ghee
  • 1/2 cup organic whole milk cottage cheese
  • 3/4 cup organic sour cream
  • 2 cups shredded mozzarella cheese (divided)
  • 1/4 cup chopped fresh Italian parsley
  • 1 teaspoon mineral-rich salt
  • 1 1/2 teaspoons garlic granules or garlic powder
  • 1 teaspoon dried thyme
  • Juice and zest of 1/2 lemon
  • 2 cups fresh organic spinach
  • 18 oz drained artichoke hearts, halved


Instructions

  1. Preheat your oven to 375 degrees F.
  2. Grease the casserole dish using your chosen healthy fat.
  3. In a large mixing bowl, combine the shredded chicken, healthy fat, cottage cheese, and sour cream.
  4. Mix well, followed by adding 1 1/2 cups shredded mozzarella, parsley, salt, garlic, thyme, lemon juice, and zest. Stir until evenly distributed.
  5. Fold in the fresh spinach and artichoke hearts until combined.
  6. Pour the mixture into the greased casserole dish.
  7. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the top.
  8. Bake in the oven for 40-50 minutes until the cheesy topping is lightly golden brown.
  9. Allow the casserole to cool for 10 minutes before serving.

Notes

Use cooked chicken that has been seasoned for best flavor. For a vegetarian option, omit the chicken and substitute with beans or lentils.
