A hearty and comforting white chicken chili made with wholesome ingredients, perfect for busy weeknights or cozy gatherings.


Ingredients

  • 1 lb cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream or Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Sauté the onion and garlic until translucent in a large pot.
  2. Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  4. Stir in the heavy cream or Greek yogurt until well combined.
  5. Serve hot, garnished with fresh cilantro.

Notes

For a creamier texture, adjust the ratio of heavy cream or Greek yogurt. Increase spice by adding more chili powder or jalapeños if desired.
