A nourishing and flavorful white chicken chili featuring tender chicken, creamy white beans, and a blend of spices, perfect for cozy meals.
Ingredients
- 1 pound chicken breasts
- 1 can white beans (e.g., cannellini or great northern)
- 1 cup diced onions
- 1 cup diced bell peppers
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup corn (optional)
- Fresh cilantro for garnish
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the white beans, diced onions, bell peppers, garlic, chicken broth, cumin, chili powder, salt, and pepper. If using corn, add it now.
- Stir to combine all ingredients.
- Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
- Once cooked, shred the chicken inside the crockpot using two forks.
- Stir well to mix the shredded chicken with the chili.
- Serve hot, garnished with fresh cilantro.
Notes
For a thicker chili, mash some beans against the sides of the crockpot and stir them into the chili.
