Description

A nourishing and flavorful white chicken chili featuring tender chicken, creamy white beans, and a blend of spices, perfect for cozy meals.


Ingredients

  • 1 pound chicken breasts
  • 1 can white beans (e.g., cannellini or great northern)
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Fresh cilantro for garnish


Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the white beans, diced onions, bell peppers, garlic, chicken broth, cumin, chili powder, salt, and pepper. If using corn, add it now.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
  5. Once cooked, shred the chicken inside the crockpot using two forks.
  6. Stir well to mix the shredded chicken with the chili.
  7. Serve hot, garnished with fresh cilantro.

Notes

For a thicker chili, mash some beans against the sides of the crockpot and stir them into the chili.
