A comforting and flavorful white chicken chili made with tender chicken, creamy white beans, and zesty green chilies.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can white beans (such as cannellini or great northern)
- 1 can diced green chilies
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream or Greek yogurt (optional)
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot, add the diced onion and garlic, then sauté until softened.
- Add the chicken breasts and cook until no longer pink.
- Pour in the chicken broth, white beans, and diced green chilies.
- Stir in the cumin, chili powder, salt, and pepper.
- Let it simmer for about 20 minutes, or until the chicken is cooked through.
- Shred the chicken in the pot and stir in sour cream or Greek yogurt if desired.
- Serve hot, garnished with chopped cilantro.
Notes
For a vegetarian version, substitute chicken with extra beans or chunky vegetables like bell peppers.
