Description
A lighter version of traditional chili, this Healthy White Chicken Chili combines tender chicken, white beans, and vibrant green chilies for a comforting and nutritious dish.
Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 can white beans, drained and rinsed
- 1 can green chilies
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup corn (frozen or fresh)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup heavy cream (or Greek yogurt for a lighter option)
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add diced onion and minced garlic; sauté until translucent.
- Stir in the shredded chicken, white beans, green chilies, chicken broth, corn, cumin, chili powder, salt, and pepper.
- Bring to a simmer and let cook for about 20 minutes, stirring occasionally.
- Remove from heat and stir in the heavy cream (or Greek yogurt) until well combined.
- Serve hot, garnished with fresh cilantro.
Notes
For a lighter option, substitute heavy cream with Greek yogurt. Adjust spices according to your taste; add jalapeños for extra heat.
