A comforting and flavorful chicken soup with tender chicken, creamy potatoes, and vibrant vegetables.
Ingredients
- 1 lb chicken (boneless, skinless)
- 4 cups chicken broth
- 2 cups potatoes (diced)
- 1 cup carrots (sliced)
- 1 cup celery (sliced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp thyme
- 1 tsp parsley
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic; sauté until softened.
- Add chicken and cook until no longer pink.
- Add carrots, celery, and potatoes.
- Pour in chicken broth and bring to a boil.
- Season with thyme, parsley, salt, and pepper.
- Reduce heat and let simmer for 25-30 minutes or until vegetables are tender.
- Serve warm.
