Ingredients
- 4 cups Sweet Potatoes, cubed

- 1 pound Chicken Breast, cut into cubes
- 1 teaspoon Salt (to taste)
- 1 teaspoon Pepper (to taste)
- 2 cups Rice (brown rice preferred)
- 1 cup Greek Yogurt (sour cream is an alternative)
- 2 tablespoons Lime Juice (or lemon juice)
- 1 tablespoon Sriracha (adjust for spice)
- 1 teaspoon Cumin
- 1 bunch Fresh Herbs (cilantro or parsley, depending on preference)
- 2 cups Green Vegetables (like sautéed or steamed broccoli or spinach)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender and slightly caramelized.
- Cook the brown rice according to package instructions.
- Heat a drizzle of olive oil in a separate skillet over medium heat. Add the cubed chicken breast and season with cumin, salt, and pepper. Cook until golden and cooked through, about 7-10 minutes.
- Mix the Greek yogurt, lime juice, Sriracha, and chopped herbs to create a zesty sauce.
- Assemble your bowls by layering the rice, adding the chicken and sweet potatoes, and topping with green vegetables.
- Drizzle the yogurt sauce over the top, garnish with additional herbs if desired, and serve immediately.
Notes
