Ingredients

  • 1 rotisserie chicken, shredded
  • 1 box of stuffing mix
  • 2 cups chicken broth
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced celery and onion, and sauté until softened.
  4. Combine shredded chicken, sautéed vegetables, stuffing mix, and chicken broth in a mixing bowl. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Top with mixed vegetables, spreading them evenly.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Cover with foil and bake for 30 minutes.
