Ingredients
- 1 rotisserie chicken, shredded
- 1 box of stuffing mix
- 2 cups chicken broth
- 1 cup celery, diced
- 1 cup onion, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add diced celery and onion, and sauté until softened.
- Combine shredded chicken, sautéed vegetables, stuffing mix, and chicken broth in a mixing bowl. Mix well.
- Transfer the mixture to a greased casserole dish.
- Top with mixed vegetables, spreading them evenly.
- Sprinkle shredded cheddar cheese over the top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving.
