Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until browned and no longer pink.
  3. Stir in garlic and ginger, cooking for an additional minute.
  4. Push the chicken to one side of the skillet and add the mixed vegetables, cooking until tender.
  5. Move the chicken and vegetables to one side, and pour in the beaten eggs. Scramble them until fully cooked.
  6. Add the cooked rice to the skillet, mixing everything together.
  7. Pour in the soy sauce and season with salt and pepper. Stir well to combine.
  8. Cook for an additional 2-3 minutes until everything is heated through.
