Ingredients
- 2 cups cooked rice
- 1 lb chicken breast, diced
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add diced chicken and cook until browned and no longer pink.
- Stir in garlic and ginger, cooking for an additional minute.
- Push the chicken to one side of the skillet and add the mixed vegetables, cooking until tender.
- Move the chicken and vegetables to one side, and pour in the beaten eggs. Scramble them until fully cooked.
- Add the cooked rice to the skillet, mixing everything together.
- Pour in the soy sauce and season with salt and pepper. Stir well to combine.
- Cook for an additional 2-3 minutes until everything is heated through.
- Garnish with chopped green onions before serving.
