Description

A hearty and nutritious bowl featuring slow-cooked BBQ chicken, colorful slaw, beans, and creamy avocado, perfect for a healthy lifestyle.


Ingredients

  • 2 cups Slow Cooker BBQ Chicken (or cooked shredded chicken tossed with â…“ cup BBQ sauce)
  • 2 cups Purple Cabbage Slaw
  • 1 cup fresh or frozen-defrosted corn kernels
  • 1 cup canned black beans, drained and rinsed
  • 1 cup cooked rice
  • 2 green onions, thinly sliced
  • 1 avocado, sliced
  • 4 tablespoons Chipotle BBQ Sauce (or sauce of choice)


Instructions

  1. Place chicken breasts in a slow cooker and cover with BBQ sauce. Cook on low for about 360 minutes or until tender.
  2. Shred the chicken with two forks and toss with additional BBQ sauce if desired.
  3. Layer cooked rice as the base in each serving bowl.
  4. Add a generous portion of black beans, followed by fresh corn and the purple cabbage slaw.
  5. Top each bowl with the shredded BBQ chicken.
  6. Garnish with sliced green onions and avocado. Drizzle with Chipotle BBQ sauce for extra flavor.

Notes

For added texture, try toasting the black beans in a skillet for a few minutes before adding them to the bowl. Substitute purple cabbage with green cabbage if needed.
