A comforting and flavorful Cajun-inspired dish featuring marinated chicken in a creamy sauce served over rice.
Ingredients
- 800 g chicken breast (cut into halves)
- 1.5 tsp Cajun seasoning mix
- 2 tsp olive oil
- 1 medium red onion (chopped)
- 4-5 garlic cloves (chopped)
- 25 g grass-fed butter for cooking
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp chili powder
- 250 ml milk
- 150 g light cream cheese
- 40 g Parmesan cheese
- Fresh parsley (for garnish)
Instructions
- Marinate the chicken pieces overnight with Cajun seasoning and olive oil.
- Heat a pan over medium-high heat and melt the grass-fed butter.
- Cook the marinated chicken until a golden crust forms, about 6-8 minutes on each side.
- Let the chicken rest before slicing it into strips.
- Sauté the chopped red onion and garlic until fragrant, about 2-3 minutes.
- Add the remaining Cajun seasoning and toss in the day-old rice.
- Melt the butter and whisk in the milk, then mix in the light cream cheese and Parmesan until smooth.
- Layer the Cajun rice on a plate, top with sliced chicken and drizzle creamy sauce.
- Garnish with fresh parsley.
Notes
Marinating overnight enhances flavor. Using day-old rice improves texture.
