Description

A comforting and flavorful Cajun-inspired dish featuring marinated chicken in a creamy sauce served over rice.


Ingredients

  • 800 g chicken breast (cut into halves)
  • 1.5 tsp Cajun seasoning mix
  • 2 tsp olive oil
  • 1 medium red onion (chopped)
  • 4-5 garlic cloves (chopped)
  • 25 g grass-fed butter for cooking
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp chili powder
  • 250 ml milk
  • 150 g light cream cheese
  • 40 g Parmesan cheese
  • Fresh parsley (for garnish)


Instructions

  1. Marinate the chicken pieces overnight with Cajun seasoning and olive oil.
  2. Heat a pan over medium-high heat and melt the grass-fed butter.
  3. Cook the marinated chicken until a golden crust forms, about 6-8 minutes on each side.
  4. Let the chicken rest before slicing it into strips.
  5. Sauté the chopped red onion and garlic until fragrant, about 2-3 minutes.
  6. Add the remaining Cajun seasoning and toss in the day-old rice.
  7. Melt the butter and whisk in the milk, then mix in the light cream cheese and Parmesan until smooth.
  8. Layer the Cajun rice on a plate, top with sliced chicken and drizzle creamy sauce.
  9. Garnish with fresh parsley.

Notes

Marinating overnight enhances flavor. Using day-old rice improves texture.
